Peanut Sauce

- ¾ cup roasted unsalted peanuts (chopped)
- 1l coconut milk
- 2 tablespoon red curry paste
- 2 tablespoon sugar
- 3 tablespoon lemon juice
- 3 teaspoon fish sauce
Heat half of the coconut milk in a medium saucepan over a high heat. Add red curry paste and stir until curry paste dissolved. Continue to heat over high heat for 10 minutes until the oil from the coconut milk has risen to the top.
Lower the heat to medium-high and add peanuts. Stir and add the rest of the coconut milk, bring to boil and add the sugar, lemon juice and a fish sauce. Stirring occasionally, cook for 20 minutes, until the sauce has thickened.
